What we do

Most disappointment with a whole animal happens at the cutting stage, not the buying stage. A family orders a sheep, receives a pile of unnamed bags, and spends a month guessing what is in each one. Our cutting service exists to prevent exactly that. Before anything is cut we ask what you cook: tagines, grills, kofta, mahshi with mince, fattah with bone-in pieces, soup from bones, kawarea. Then we cut to those uses and name each bag — shoulder, leg, ribs, chops, shank, neck, cubes for stew, mince, bones for soup — in Arabic or English as you prefer. Portion size follows your household, so a bag is one meal rather than a block you have to refreeze. Fat is trimmed to the level you ask for, not to a default. Boneless work is done properly by hand rather than sawn through. Whatever you do not want in your kitchen — head, trotters, offal — is either bagged separately or left out entirely. Everything is weighed on camera so the weights you were quoted and the weights you receive are the same numbers.
